The colour varies from white gold to pale gold, or sometimes yellow gold after ageing in barrels. This wine shows aromas of white flowers (honeysuckle and hawthorn) associated with lemony aromas and notes of apple, hazelnut, and white nettle. There are sometimes notes of beeswax and toast. On the palate, it has a good balance between acidity and fruit that reveal richness and a solid body.
Harvest is done by hand in small boxes. The grapes pressed is very soft to extract a maximum of fruits. The juice is then put into oak barrels where the fermentation starts. The wine is then aged in oak for 12 months.
Ideal with warm starters, fish and shellfish dishes poached or in cream sauce.
Domaine des Chambris was created by Pierre Laurent in 2001 and is essentially built on two complementary sites: Etang Vergy, ideal for Pinot Noir, and Chevannes, where Chardonnay is the star. The winery's philosophy is to let nature do its work and to intervene only when strictly necessary. For this reason, very few treatments are used in the vineyard and the wines produced are a pure expression of the territory and the vintage.
