Pale green-gold hue. The wine offers aromas of exotic fruit (grapefruit, lemon, and mango) on the nose. On the palate, it is fresh and spry yet smooth, fruity and easy-to-drink. After pressing, the must is settled, and fermentation is carried out in a closed vat. The wine is then aged on its lees until the end of malo-lactic fermentation. The Bourgogne Aligoté is usually bottled between January and March of the following year. The grapes grow in slopes near the village of Mancey, at a location known as "Les Leynes de Mancey", with a clay-limestone structure and a high content of white marl.
Ideal as an aperitif, on its own, or with cassis to create a Kir. It pairs nicely with fish or seafood and is perfect with sushi.
The family farm was created in the 1950’s and at the time it was more focused on mixed farming, raising livestock, and working a few parcels of vines. By the late 1980’s, it had gradually switched to viticulture and took over several small vineyards in the villages of Royer and Mancey, and the Domaine expanded to the size it has today, around 26 hectares.
The wine estate has been certificated HEV since 2019 and for several years now the team has favoured healthy winegrowing by working the soil, providing natural green cover for certain vines without any insecticidal treatment and without any rot prevention. Their goal is to reduce the impact of farming practices on the environment as much as possible and supply a healthy high-quality finished product to consumers.
