Abasolo El Whisky de Mexico

Mexican Whisky

£49.95

Deep, nuanced notes of roasted corn, honey, vanilla, black tea, and leather, revealed through nixtamalization, are true to our Mexican ancestral corn provenance and unlike any other whisky profile. Abasolo uncovers the deepest flavours of ancestral corn through nixtamalization, a 4,000-year-old cooking technique never used before in whisky production, but fundamental in preparing corn as food in Mexico. Abasolo El Whisky De Mexico is crafted and distilled from 100% Mexican Cacahuazintle corn, which has been cultivated and passed down for more than 200 generations by local farmers for its distinct, extraordinary flavour.

Located in the heart of Jilotepec, Destilería y Bodega Abasolo is the first and only Mexican distillery built from the ground up and dedicated since its inception to capturing the millenary Mexican culture of corn in whisky. Located on a property that was originally used for planting and drying corn, the destilería consists of restored old buildings. along with a modern architectural structure inspired by traditional corn storage systems called "sincolotes”. Every element of the Abasolo distillery is meant to reinforce and reinvent the ancient tradition and contemporary craft that is part of the Abasolo whisky-making process and inherent in contemporary Mexican culture. The distillery employs local workers from Jilotepec and other neighbouring municipalities, training them in the corn trade and whisky production and contributing to the local economy.
