Superb on the nose: notes of ripe plum, berries, blackberry, cherry, sweet toasted notes, vanilla and a light sprinkling of spices are mixed in a full and rich perfume. The taste is harmonious, fresh and fruity. It is a structured wine, very intense and persistent in the aftertaste. The oak gives the wine softness yet respecting its delicate and pleasant tannicity.
Verso Sud wine should be paired with important first courses such as lasagna or pasta with meat sauce, grilled meat or mature cheeses.
Susumaniello grape is one of the most important variety in the area of Brindisi. Verso Sud is a wine made from Susumaniello grape only, masterfully processed before reaching the bottle: ten months ageing in the steel tanks and the next six months in French oak barrels.
Its name indicates the position of the vineyards, located in the southern part of Valle d’Itria and stretching into the province of Brindisi, in the surroundings of Torre Guaceto Nature Reserve.
A Latin pastinum was a hoe and, by derivation, a place where vines grew. Which rather makes one wonder why more wineries don’t have this name. The Pástini vineyards comprise 15 hectares managed by the Carparelli family. They make wines from the ancient grape varieties found in the Valle d’Itria, whose winemaking history dates back to before Roman times when the Greeks first landed here 3000 years ago.
