Aromas of flint, wet stone and sea iodine combined with ripe yellow fruits, peaches, and honey, with notes of bread that give complexity. On the palate, this wine is bright with a crispy acidity integrated into the rich body. The creamy texture is combined with the mineral, saline and ripe fruit character. The long finish adds depth to the wine. Fermentation takes place in steel tanks and the wine is then left resting on fine lees for 7 months.

Ideal with seafood and fish cooked in any style (grilled, fried or steamed).

In 2010, during the Greek financial crisis, Yannis Valambous left his successful career as an economist in London and returned to Santorini, the island of his childhood, driven by his love for wine. There, he revitalized the vineyards he inherited from his father with the aim of creating exceptional wines that honor the island's winemaking tradition. In 2014, he founded Vassaltis, focusing on showcasing the unique quality of Santorini’s grapes, such as Assyrtiko, Aidani, and Mavrotragano. The volcanic soil of the island, rich in minerals and free from clay, gives the grapes a distinct flavor and natural resistance to disease. Vassaltis’ mission is to evolve Santorini's winemaking tradition in a sustainable way, staying true to the island’s terroir.
